Hello there. The holiday season is here and so is the season for gathering and entertaining. We make a lot of food during this time of the year. At least, I don’t cook so much throughout the year than I do during the holiday months. It is both tiring and fulfilling. My house is filled with loved ones and friends. To make things simple, I try to organize my cooking well in advance. I usually don’t make different food for kids. I just adjust the spice level to suit them.

In today’s post, I am sharing one such easy recipe which is good for kids as well as for grown-ups. I have made a Spaghetti Squash Casserole, and especially for kids, I have baked it in individual portioned bowls. This made things easier in terms of serving and eating.

In the following recipe, I have used mild flavors of basil and oregano to go with spaghetti squash. Since spaghetti squash looks just like tiny noodles, I have added pasta sauce and lots of cheese. (three types). I have also added some baby spinach leaves, to get some greens going in the diet. Finally, I have baked this till the cheese is all melted and everything comes together as a delicious pasta (aka spaghetti squash pasta) dish. My daughter didn’t realize she was having a vegetable.

For the big kids and grown-up version, I have added green sriracha while layering and serving. You can also add normal sriracha sauce. It will give a spicy kick and a delicious taste. You can as well add meat to this casserole. This can be a great way to finish off the leftovers. The possibilities are endless.

Spaghetti Squash Casserole

These little Spaghetti Casseroles are perfect for the Holiday entertaining. Individually portioned casseroles make serving little ones easy.

You Need:

  • 1 1/2 cups Spaghetti Squash (cooked)
  • 1/2 cup Pasta Sauce (tomato based)
  • 1/4 cup Baby Spinach (chopped)
  • 2-3 Basil Leaves (chopped)
  • A dash of Dried Oregano
  • Cheddar+ Pepper Jack+ Mozzarella Cheese (as needed)

How To Make It:

  1. Start by heating the oven to 350C. 

  2. In an oven-safe bowl, add cooked spaghetti squash. Top that with pasta sauce. Then add spinach, basil leaves and parsley along with dried oregano. 

  3. Layer it with three kinds of cheese. 

  4. Bake it for 10 minutes, or till the cheese has melted. 

  5. Once done, allow it cool down a bit and then serve. 

Recipe Notes

  • I have baked Spaghetti Squash in the oven. And then used it to make this recipe.
  • After baking the squash, I made sure to get rid of extra moisture from squash, by keeping the pulp on kitchen napkin for some time. Otherwise, the casserole will give out too much liquid.
  • You can adjust the spice level in this recipe according to your preference. 
  • Make sure you allow the dish to cool down before serving. The cheese inside will be bubbling hot.

This recipe is great for babies 10 months and above.

Spaghetti squash is a type of winter squash. It gets its name from the pale-yellow flesh when cooked turned into a stringy pasta-like threads. It has a very mild flavour so it can be used in both savoury and sweet dishes. 

Spaghetti Squash is a good source of carbohydrates, vitamins and minerals. It is rich in fiber which helps in maintaining healthy digestion for little ones and reduces constipation.
