Hi there, everyone. Finally, it’s getting cold in my part of the world. I love the cold crisp morning air and winter nights. But with that, I dread the upcoming flu season too. There will be runny noses in no time. So today, I am sharing with you all the soup recipe which can come handy for those not so well days. This Quick Noodle Soup is just made with just 4 ingredients. Your older kids can make this too.
This soup is my Go-To soup when Cold and Fever hit my household. It a comfort food in a bowl. I make this for my little missy when she is down with cold and cough. She likes it with noodles, so I add noodles. Or at times I like to add any kind of pasta I have it in my pantry. Try adding vermicelli pasta to this soup, the thin noodles give this soup a beautiful texture.

I have started with using my homemade vegetable broth, followed that with adding little ginger, green onions and noodles. Simmered all this for few minutes and I am done. Simple recipe but very effective. This can take care of Man Cold too. Now isn’t that a lifesaver?
Give this a try on a comforting cold day or on a not so comforting runny nose day. This soup will surely make you and your little one feel better.
Let’s go through the recipe.

Quick Noodles Soup
Quick Noodles Soup- A comfort food for cold days.
You Need:
- 2 cups Vegetable Broth
- 1 cup Uncooked Noodles/Pasta
- 1/4 cup Spring Onions (chopped)
- 1/4 tsp Ginger (grated)
How To Make It:

In a pot add the vegetable broth. Add ginger and bring it to a boil.

Now add noodles and green onions let it simmer on medium until noodles are cooked.

Before serving, garnish it with green onions and serve.
My Little Notes:
Clear Noodle Soup is great for babies 8 months and above to grown-ups. I have used homemade Vegetable Broth in my recipe. But you can use chicken or beef broth as well. I would insist that you use broth instead of stock since broth is already seasoned.
But if you are unable to use get broth, then any stock (vegetable, chicken or beef) would work too. Just season it with your favourite seasoning.

We had a cold weekend so it was soup all the way! Definitely agree with using homemade stock – it’s so easy but much better.
