Hello there. New Year New Beginnings. I am quite late this time with my new year’s post. But better late than never.

It’s been quite some time since we have talked. So many things have changed on my side.

Let’s first start with the recipe. Today I am sharing a recipe that can give your regular breakfast scramble a delicious twist.

My Quick Breakfast Scramble recipe is a great way to clear up your leftovers as well.

So let’s dig in.

Before we start talking about the recipe, I would like to talk about the changes that took place at my side. In 2019, I started my own photography business.  Yaayy..!!!

When I started this blog, I just wanted to share what my baby ate, but it opened so many doors for me.

You all are a part of it and my heart is filled with gratitude.

Anyways, enough about me, and now let’s get on to the recipe.

Coming up with the recipe.

As the year started, I had no idea where to begin. There were too many ideas, but nothing that I felt was worth sharing.

Last week I had this Aha moment. My daughter isn’t much of a fan of scrambled eggs, and I was looking for ideas to incorporate those into her diet.

She loves bacon, so I knew it has to be a part of the recipe.

So I rounded up with eggs, bacon, and sweet peppers. When I started to actually make the recipe, I realized sweet peppers were missing.

In that desperate moment of cursing myself for not getting the sweet peppers from the grocery store before making the recipe, I found a tub of Pico De Gallo in the refrigerator.

I decided to use Pico De Gallo instead of sweet peppers and it was the best decision I ever made. The taste of pico de gallo went so well with bacon and eggs.

How To Make Quick Breakfast Scramble?

As I mentioned earlier, I changed the ingredients at the very last minute. And that was the best decision ever.

Hence for this recipe, you need eggs, pico de gallo, bacon, and butter as the main ingredients.

For the secondary ingredient, you need salt and pepper for taste and chopped cilantro for flavor and garnish.

I start with melting the butter in a skillet. I made sure that the butter covers all the sides of the skillet.

Once it melts, I add pico de gallo and bacon. I cook these two till the water from pico de gallo is reduced, and the bacon pieces start to give out their fat.

Bacon fat is the highlight of the recipe. It gives out the delicious flavor of the scramble.

Now it’s time to add eggs. I beat the eggs before adding them to the skillet.

I have added salt and black pepper to the egg mixture, so it is well incorporated.

I cook it on low, medium heat, making sure not to overcook the eggs.

Once the eggs are cooked, you are ready to serve.

Variations For the Quick Breakfast Scramble:

For me, my breakfast scramble recipe is a way to use up the leftovers. I had leftover pico de gallo in the refrigerator and bacon strips.

I used them to jazz up the regular scramble. You can add any meat that you prefer to this scramble.

For the grow-up version, I like to add chopped serrano pepper while cooking for some heat.

Quick breakfast scramble is great as is with a warm toast. But you can add this to your sandwich or breakfast wrap.

Quick Breakfast Scramble

Jazz up your morning with this delicious Quick Breakfast Scramble

You Need:

  • 2 Eggs
  • 2 Bacon Strips (chopped into bite-size pieces)
  • 2 tbsp Pico De Gallo
  • 1 1/2 tsp Butter (unsalted)
  • Salt And Black Pepper (to taste)
  • Cilantro (chopped- as needed)

How To Make It:

  1. Start by melting butter in the skillet.

  2. In a bowl, add eggs, salt, and black pepper. Whisk them together. Keep it aside.

  3. Once the butter is melted, add pico de gallo and bacon pieces. Cook them till the bacon releases the fat.

  4. Next, add the egg mixture. Cook these on low medium heat.

  5. Gently fold the eggs as they start cooking.

  6. Once cooked, serve them with a slice of warm toasted bread.

Recipe Notes

  • Make sure to cook the eggs on a low meduim heat.
  • Be careful with salt, bacon already has salt in it.
