Hello there. It’s the end of October, and we are officially entering the Holiday Season. It is usually the time when we all start planning for the Holiday Season meals.
Today’s recipe is an addition to your Holiday Meal Plans. My recipe of Cajun Spiced Mushrooms And Potatoes can make a great side dish for your holiday or just a weeknight meal.
Inspiration For This Recipe:
A few months back, I went to a seafood restaurant, and there I had this crab feast boil. In that boil, they had added little red potatoes.
The red potatoes had soaked in all the delicious juices and flavors from Cajun Spices. And they tasted amazing. I wanted to make a recipe just with these flavors.
Mushrooms matched well with the red potatoes. And the earthy meaty aroma of this dish turned out tempting.
Making It Kids Friendly:
My main goal here was to make it Kids Friendly. My dear Miss K is not much a fan of mushrooms these days. But she loves potatoes. So adding potatoes with mushrooms was a win.
She liked the potatoes in it and on the side also went in for some mushrooms. The flavors here are not too overpowering; hence, she loved it.
Ingredients In This Recipe:
I have used red potatoes and mushrooms as the base ingredients. For flavor, I have used Cajun Spices. And for a more fresh aroma and additional flavor, I have added scallions.
My main reason for using scallions is because many times kids don’t like onions in there food. Aka- my daughter. She will separate every part of the onion from her food.
So my best bet was to use scallions, which served the purpose of giving the onion flavor to the dish without actually having onions insight.
How To Make Cajun Spiced Mushrooms And Potatoes:
I can tell you this recipe is amazingly simple to make. I started with seasoning red potatoes salt, black pepper, and olive oil. Then baked them in the oven at 400*C for 30 minutes. The first part of this recipe was done.
For the second part, I started with some butter in a pan. Next, I added cajun spices, garlic powder, and some scallions. I cooked it for a few minutes taking care not to burn them.
Next, I added the washed and cut mushrooms and cooked until most of the water from the mushrooms was evaporated. At this stage, I added the baked red potatoes and mixed everything well. Another five more minutes of the heat, and it was ready.
Just before serving, I added some more scallions to give it a fresh look.

Cajun Spiced Mushrooms And Potatoes

You Need:
- 1 1/2 cup Red Potatoes (washed and cut into half)
- 1 1/2 cup Mushrooms (washed and cut)
- 2 tbs Scallions (chopped)
- 1 tbs Unsalted Butter
- 2 tsp Cajun Spices
- 1/4 tsp Garlic Powder
For Potato Rub:
- Salt+ Black Pepper+ Olive Oil (As needed)
How To Make It:
Potato Rub:

In a bowl, add red skin potatoes, salt, black pepper, and olive oil. Mix everything well.

Transfer this to a baking tray and bake it at 400*C in the oven for 30 minutes.

Once done, take them out and keep it aside.
Making the Cajun Spiced Mushrooms And Potatoes

In a pan add butter. Follow that with Cajun Spice, garlic powder and few scallions. Make sure the heat is on low. Cook this for a minute.

Next step, add the cut mushrooms and stir it well. Cook the mushrooms on medium heat till almost all the water is evaporated.

Now add the baked potatoes, and incorporate everything well. Cook it for another five minutes.

Once done, switch off the flame. Before serving, add the remaining scallions and serve.
Recipe Notes
- Make sure to cook the spices at low heat, do not burn the spices.
- You can adjust the seasoning according to your preference.
- You can add leftover meat to this dish if desired.
- For more heat, add some siracha.
