Good morning everyone. It’s Foodie Mamas Day today. And we are here with a bunch of delicious recipes. This month Kaitie from Fuchsia Freezer chose to work with Avocados. So we have come up with 5 delicious recipes made from Avocados.
Since schools have started, I thought of making a pasta recipe which can be made for busy weekdays. This pasta can be a great lunch option too. There are a lot of Avocado pasta recipes which have basil, which I have tried.
But none really hit the spot for me. So for my version, I have added mint along with basil. The combination of mint and basil makes wonders. The aroma of mint gives this pasta a fresh refreshing touch.
I have also added some spinach to this recipe, which makes this a healthy meal.
Avocados are packed with protein, fiber, niacin, thiamin, riboflavin, folic acid, and zinc. There is no other fruit which has so much diversity of nutrients. They also contain Omega 3 and fatty acids.
For developing and growing babies, this kind of fats is essential and beneficial for overall development.
I introduced my daughter to avocados around mid 7 months. I just wanted to wait till she got used to her first solid foods. This pasta can be served to babies 10 months and above. If they are well adjusted to avocados.
You can use a different variety of pasta instead of bowtie. Orzo might work really well.

While choosing an Avocado, pick ones which are slightly soft without dark or sunken spots. A firm avocado can ripen in a fruit basket or paper bag at room temperature. Used avocados can be stored in a refrigerator in a plastic bag or plastic wrap. Sprinkle lemon juice to the exposed avocado pulp to avoid turning it brown.
Avocado Pasta
You Need:
- 1 Avocado
- 1 Garlic clove
- 2-3 Mint leaves
- 1 cup Bow Tie Pasta
- 1/2 cup Cherry Tomatoes
- 1/4 cup Basil Leaves
- 1/4 cup Spinach blanched
- 1 tbs Extra Virgin Olive Oil
- 1/4 tsp Dried Oregano
- Salt and Black pepper (as needed)
How To Make It:

Start with cooking pasta according to packet instructions.

In a food processor, add avocado pieces, basil leaves, mint leaves, spinach, garlic clove, oregano, salt and black pepper.

Process this into a smooth sauce. Add olive oil while grinding. Once done, keep it aside.

In a mixing bowl, add cooked pasta, avocado pasta sauce, and cherry tomatoes. Mix everything well. Check for seasoning at this point.

Garnish this with shredded mozzarella or parmesan cheese and serve.
