Hello everyone. It’s December already. The soup season is in full swing. As much I love the cold winter breeze, I absolutely dread the sneezes and coughs that come with it.

Today I am sharing a recipe that can come in really handy on such occasions. My recipe for Clear Tortellini Soup is a clear stock-based soup with just tortellini inside.

It is a quick meal when someone in the family is little under the weather and needs just a little more comfort.

Let’s get into how to make Clear Tortellini Soup.

How did I come up with this recipe?

With the current situation, every sneeze and cough got a new meaning. I wanted my family to have comfort food when they weren’t feeling at their best.

Clear stock soups are perfect for such occasions. The main ingredient that adds interest to this soup is Tortellini.

I bought a pack of fresh tortellini and couldn’t wait to try it for this recipe.

What goes in Clear Tortellini Soup?

Tortellini and stock are the two main ingredients. I wanted to keep it clear, especially if you have picky eaters who dislike vegetables lurking around their food.

To flavor the stock, I have used garlic and ginger. And added some chives/green onions to give it a hint of onion flavor.

Let’s talk about stock for a bit. In this recipe, I have used a mix of vegetable and chicken stock. I wanted to get the nutrients of vegetables and chicken in the soup. Another option is using my homemade vegetable broth for this recipe.

You can use the beef stock too. It will work as well.

In the case of Tortellini, I have used cheese-stuffed tortellini. You can use any other tortellini according to your preference.

How do I make the soup? 

Start with heating some olive oil in a pot. Once the oil is heated, added chopped green onions or chives, grated garlic, and ginger, fry these for few seconds. Make sure not to burn it. (I did that and learned my lesson)

Next step, add the vegetable and chicken broth along with half a cup of water. Bring this to a boil. This is a good time to add salt. But if there is salt already in the stock, you can skip it. It totally depends on the salt content in the stock.

Once this stock comes to a boil, add the tortellini. Simmer these till the pasta is cooked. That’s it.

When you are ready to serve, ladle the soup in the serving bowl. Top it with some grated parmesan cheese and chopped chives (if needed, remember vegetables lurking around the food).

And you are ready to eat. Now that is simple.

Are there any variations? 

Of course. You can add:

  • Vegetable of your choice. Mushrooms, carrots, celery, potatoes, peas- to name a few.
  • Meat- chicken pieces, cut sausage pieces, beef pieces, or pork. ( A good way to use up leftovers)
  • Add heat by using hot sauce or siracha.

Clear Tortellini Soup

You Need:

  • 1 cup Chicken Stock (low sodium)
  • 1 cup Vegetable Stock (low sodium)
  • 1/2 cup Tortellini
  • 1/4 cup Water
  • 1 1/2 tbsp Chives Or Green Onions (chopped, save some for garnish- if needed)
  • 1 tbsp Olive Oil (extra virgin)
  • 1 tsp Garlic (finely grated)
  • 1 tsp Ginger (finely grated)
  • Parmesan Cheese (as required)
  • Salt And Black Pepper (as required)

How To Make It:

  1. Start by heating olive oil in a pot. Add grated ginger, garlic, and chives/green onions. Fry it for few seconds.

  2. Next step, add the chicken and vegetable stock. Add water and bring it to a boil. Add salt at this point if needed, along with black pepper.

  3. Once boiled, add the tortellini. Stir well and simmer it on medium-low till the tortellini is cooked.

  4. As the tortellini gets cooked, they will start floating. It is time to serve.

  5. Ladle a soup in a bowl. Garnish it with grated parmesan cheese and chives/onions. And serve warm.

Recipe Notes

  • Make sure not to burn the ginger/garlic while frying.
  • You can adjust the amount of tortellini pasta according to the size of the pasta.
  • You can use any stock for the soup-preferably low sodium.
  • Please taste and check the soup before adding salt.
