Happy Cinco De Mayo everyone. I love Mexican food and culture and my love for this vibrant culture comes alive with this holiday. It is one such holiday where we are out with our family and friends eating spicy and delicious food and sipping amazing margaritas. Now, who would say “NO” to that? Since everyone gets involved in the festivities, kids need their share of food and drinks too. So today I am sharing these 8 Kids-Friendly Recipes To Celebrate Cinco De Mayo to the fullest. I know it’s already the D-Day, and you have planned everything already. But, it’s weekend, and festivities can carry on throughout the weekend. Isn’t it? So let’s dig in and go through the choices you have, to make Cinco De Mayo fun and memorable for everyone.

Let’s start with Eats.

  • Chicken Quesadillas:

Nothing is as quick and delicious as these Chicken Quesadillas. I have taken as many shortcuts as possible to make it a quick meal. In the following recipe, I have cooked chicken with organic tomato salsa. Made some fajitas and filled the quesadilla with chicken, fajitas, and lots of cheese. I paired this with fresh Mango and strawberry salsa. This fruity savoury dip is lip smacking for kids as well as for grown-ups. Since I made this recipe keeping kids in mind, I have used small size tortillas to make it kids friendly. But for grown-ups, you have used bigger ones too.

For the grown-up version, you can add some green chiles while cooking the chicken as well as some paprika while marinating the chicken. This gives a nice chilli aroma and adds some heat. Serve this quesadilla with some homemade guacamole and sour cream. Recipe for Chicken Quesadillas. 

  • Spicy Shrimp Tacos With Mint Creme:

Spicy Shrimp Tacos with Mint Creme adds a fiery twist to any lunch or dinner. I have used green chiles to make it fiery hot. You can adjust the level of spiciness in these tacos. I start with marinating shrimps in ginger garlic paste and cajun spices. Then cook them till they are perfect with little char marks. Follow that with making fajitas and finally make the mint creme.

Once all the preparation is done, I slightly heat the tortillas and stake them with fajitas, followed by spicy juicy shrimp, cabbage and finally the mint creme. Mint creme make these tacos divine. I assemble them and serve immediately with some salsa and chips. Now isn’t that YUM. Recipe for Spicy Shrimp Tacos With Mint Creme. 

  • Roasted Corn Salsa:

This one is a fusion of Mexican and Indian flavours. Here I have charred corn and sweet peppers. Both of these ingredients give this salsa a very distinct earthy sweet flavour. I have added mint to give it a refreshing taste. And to finish it off, I have used ‘Chaat Masala’. Chaat masala is a mixture of various spices which gives an instant zing to food. In India, it is added to salads, fruits, and street foods. The main ingredient in Chaat masala is dried mango powder and black salt which gives a tang to this masala. You can get Chaat Masala in any Indian Grocery store or buy it online.

If you are not comfortable adding Chaat masala to this corn salsa, that’s fine too. It will taste equally good. You can have this salsa with tortilla chips. Recipe for Roasted Corn Salsa. 

  • Quick Strawberry Salsa:

In this recipe, I have just used fresh-cut mangoes and strawberries and added some oregano to it. It is a good accompaniment to any of grilled dishes too. Kids love this salsa due to it’s sweet and tangy flavour combination, along with bright colours that scream summer at it’s best. This recipe is great for children 1 year and above. While serving this salsa, make sure to cut the fruit into toddler-friendly pieces to reduce the risk choking hazard. Recipe for Quick Strawberry Salsa.

  • Mango Salsa:

Mango Salsa- Easy Baby Meals

This is a wonderful fruity salsa for toddlers. Besides mangoes, I have added, strawberries, black grapes, tomatoes, and cucumbers. Along with these, I added little cumin powder and fresh basil to give it an added flavour and aroma. You can serve this salsa fresh as an accompaniment to other food or as is.

The following recipe can be given to babies 1 year above. Just cut the fruit pieces small enough to avoid choking risk. For grown-ups, add little cayenne pepper, jalapeños, and onions. Recipe for Mango Salsa.

  • Mixed Berry Punch:

This is an absolutely no fuss recipe. I have used a store bought organic Mixed berry juice. In that, I added few rosemary leaves and berries. In this case, I have used raspberries and blackberries. Further, I let this mixture sit in the refrigerator for 30 minutes or so, to let the flavour and aroma of rosemary seep in. And then, when it is time to serve, I added ginger ale. The flavour from rosemary and ginger ale gives this drink a really refreshing kick. Recipe for Mixed Berry Punch. 

There is a grown-up version of this drink too.I personally, like to add Moscato wine along with ginger ale to this drink and sip it chilled.

  • Orange Strawberry Juice:

In the following recipe, I have just mixed oranges and strawberries together with little ginger for aroma. I like to add ginger to my daughter food since it has a lot of health benefits and medicinal properties. Ginger is a good source of calcium, potassium, magnesium, and folate. It also has various anti-inflammatory properties and boosts the immune system. Oranges and strawberries have their own share of health benefits too. Recipe for Orange Strawberry Juice. 

  • Kiwi Lime Lemonade:

In the following recipe, I have blended kiwi and lemon juice together. To add a little aromatic flavour, I have added little cardamom seeds. Lemon juice with cardamom together they go very well. Finally, to add a fun and nutritious element to this drink, I added some pre-soaked Chia seeds. For grown-ups, you can have it as is or can add some of your favourite liquor and enjoy it chilled.
