You Need:
1 1/2cupBeetroot(shredded)
1/2cupDried Black Mission Figs(roughly chopped)
1/2cupMilk(full fat)
3tbspQuick Cooking Oats
1tbspUnsalted Butter
1tbspSugar
1tspCardamom Powder
How To Make It:
In a non-stick pan, add the unsalted butter and heat till it melts.
As the butter melts, add shredded beetroot, dried figs, and oats. Mix it well.
Let it cook for 10 to 15 minutes. By this time, beetroots should be half cooked. At this stage, add milk.
Keep cooking until beetroots get tender. Once they get soft, add sugar and cardamom powder. Give it a good stir and cook until all the moisture evaporates and beetroot and figs come together to form a sticky ball.
After this, the mixture forms a sticky ball, switch off the heat and let it cool in a refrigerator.
Once it's cooled completely, roll this mixture into toddler bite-sized balls.
Serve.
Recipe Notes
When you add sugar, this mixture will get watery. Keep cooking until the water gets evaporated completely.
Give it a stir every now and then while making this recipe.
Keep these little bites refrigerated in an airtight container. They can stay well for up to a week.
