Avocado Pasta

You Need:

  • 1 Avocado
  • 1 Garlic clove
  • 2-3 Mint leaves
  • 1 cup Bow Tie Pasta
  • 1/2 cup Cherry Tomatoes
  • 1/4 cup Basil Leaves
  • 1/4 cup Spinach blanched
  • 1 tbs Extra Virgin Olive Oil
  • 1/4 tsp Dried Oregano
  • Salt and Black pepper (as needed)

How To Make It:

  1. Start with cooking pasta according to packet instructions.
  2. In a food processor, add avocado pieces, basil leaves, mint leaves, spinach, garlic clove, oregano, salt and black pepper.
  3. Process this into a smooth sauce. Add olive oil while grinding. Once done, keep it aside.
  4. In a mixing bowl, add cooked pasta, avocado pasta sauce, and cherry tomatoes. Mix everything well. Check for seasoning at this point.
  5. Garnish this with shredded mozzarella or parmesan cheese and serve.
