How To Make It:
Start by heating butter in a pot. Add bay leaf, fennel seeds and garlic cloves.
Now add chopped spring onions. Saute it for few seconds. Follow that with chopped potatoes.
Next, add vegetable broth and cook potatoes until tender. When they are almost tender add broccoli. Cover and cook it for 5 minutes. Turn off the heat.
Transfer this to a food processor or you can use an emulsion blender. Whisk this into a smooth puree.
Turn on the heat again of the pot and transfer this soup to it. Now add the heavy or half and half cream and mix well. Make sure the heat is on low.
Once it's warm, serve it with your favourite meal.
