A portion of warm comfort food during cold winter days.
Start by heating olive oil in a pot. Add grated ginger, garlic, and chives/green onions. Fry it for few seconds.
Next step, add the chicken and vegetable stock. Add water and bring it to a boil. Add salt at this point if needed, along with black pepper.
Once boiled, add the tortellini. Stir well and simmer it on medium-low till the tortellini is cooked.
As the tortellini gets cooked, they will start floating. It is time to serve.
Ladle a soup in a bowl. Garnish it with grated parmesan cheese and chives/onions. And serve warm.
