You Need:
1/2cupOrzo Pasta(cooked)
1/2cupPumpkin Puree
1/2cupMixed Vegetablessteamed (carrots, peas, green beans, corn)
2Garlic Cloves
1-Star Anise(small)
1Cinnamon Stick(small)
3tspTomato-Based Pasta Sauce
1/4tspButter
1tbspParsley(chopped)
Adash ofDried Oregano
Salt And Black Pepper (for seasoning)
How To Make It:
In a pot, add butter. As butter heats up, add star anise and cinnamon stick. Cook till they give a fragrant aroma, roughly for a minute or two.
Then add chopped garlic cloves, a dash of oregano and give it a stir.
Add pumpkin puree, and stir it well. Follow that with cooked vegetables. Cook this for another minute or two.
Add pasta sauce and let it simmer for few minutes. Add 1/2 tbs parsley at this stage.
Now add cooked orzo pasta, and give everything a good stir. Add the seasoning.
Cover and cook on low flame for another 10 mins.
Turn off the flame, add the remaining parsley and Serve.
