Welcome to our this month’s segment of Foodie Mamas. With everything Pumpkin around, this month we chose to work with Pumpkin. I am also happy to say that Foodie Mamas are growing. We have few more Mamas who have joined our quest to prepare delicious recipes, so now you all would be getting more amazing recipes with that particular food ingredient. More is better right.
From my side, I decided to make a pasta recipe. Since my daughter is very much into pasta these days, anything added with pasta is yum yum for her. In the following recipe, I have cooked pumpkin and vegetables and added orzo pasta to it. The secret ingredient in this pasta recipe, which gives it an amazing aroma and flavour is Star Anise. This particular spice goes very well with pumpkin.
Star Anise is one of the culinary aromatic and flavouring agents. It is said to have its origins in native China and Vietnam. Today it is used in various cuisine from China, India, Middle East and Western countries. It goes well with both sweet and savoury recipes. Star Anise has various antibacterial, antifungal and antioxidant properties. It is considered to be one of the healing herbs. Star Anise is available is various whole food markets and grocery stores. But you can these for sure at any Indian grocery store.
Using this beautiful herb with pumpkin is sure a delight. It was pumpkin spice heaven in my kitchen when I was making this recipe. This recipe can be made with meat too, as well as any with another type of pasta. I have added whole steamed vegetables for my daughter since she likes to pick her veggies and eat. But for kids who don’t prefer that, Moms- you can puree the vegetables and add them to the recipe. Here’s my little secret to more flavourful and nutritious pasta. I start roasting pasta shells in butter for few minutes and then add vegetable stock or any other stock I have in hand. This helps in bringing out the nutty aroma of pasta and gives the pasta the flavour in of the stock in which it is cooked.
This recipe is great for the entire family. It is a quick one-pot meal for busy days. Pumpkin Orzo pasta is a delicious meal for these Fall days. Try it soon.
- 1/2 cup orzo pasta (cooked)
- 1/2 cup pumpkin puree
- 1/2 cup mixed vegetables (steamed) (carrots, peas, green beans, corn)
- 2 garlic cloves
- 1-star anise (small)
- 1 cinnamon stick (small)
- 3 tsp tomato-based pasta sauce
- 1/4 tsp butter
- 1 tbsp parsley (chopped)
- Dash of dried oregano
- Salt and black pepper for seasoning.
- In a pot, add butter. As butter heats up, add star anise and cinnamon stick. Cook till they give a fragrant aroma, roughly for a minute or two.
- Then add chopped garlic cloves, a dash of oregano and give it a stir.
- Add pumpkin puree, and stir it well. Follow that with cooked vegetables. Cook this for another minute or two.
- Add pasta sauce and let it simmer for few minutes. Add 1/2 tbs parsley at this stage.
- Now add cooked orzo pasta, and give everything a good stir. Add the seasoning.
- Cover and cook on low flame for another 10 mins.
- Turn off the flame, add the remaining parsley and Serve.
