Hey there everyone. Are you all set for tomorrow? Or do you need some last moment ideas?

If you are looking for last moment drink ideas, the Pomegranate Chia Punch recipe is just for you.

I did not celebrate Valentine’s Day with my little one until this year.  My 4 year old asked me- Mama, What are you going to do for me on Valentine’s Day?

Anddddd…I had no clue. But I confidently answered, I have a special plan for you. (Mom-Life)

Ingredient- Pomegranate Chia Punch- A refreshing drink.

Since she was expecting something special from her mommy, we started with a trip to a store and bought some Conversation Heart Candies. 

I asked her if she preferred something to eat or drink to celebrate Valentine’s Day. The answer was a Drink. I came up with this Pomegranate Chia Punch.

Pomegranate Chia Punch is a quick little drink, not much of work. Just make the Pomegranate Chia syrup, and you are good to go. The rest of the ingredients are just store-bought, so it makes things easy.

In the following recipe, I added chia seeds to pomegranate juice and let them sit for 2 to 3 hours until they swell.

Next, cook this until it turns into a thick syrup. You can store this in the refrigerator and use it as a topping for ice creams or use it as a spread.

With the main cooking part done, it’s time to assemble the drink. Start with some pomegranate seeds. These are optional, though. My daughter likes to fish out things and eat, so I added them here. You can totally skip this step.

Further, add a scoop of ice cream, follow that with pomegranate chia syrup and pomegranate juice. Now it’s time for fizz; add some ginger ale.

I have used Ginger ale here cause the savory flavor of ginger complements well with tart and sour pomegranate juice and the sweetness of vanilla ice cream.

Top this with another little scoop of vanilla ice cream and some fresh pomegranate seeds, and you are all set to serve. My daughter absolutely enjoyed this drink.

You can add vanilla liquor to this drink for the grown-up version and enjoy it on absolutely any day. (Tip-This can be a great drink option for your Galantines Day Brunch )

Pomegranate Chia Punch

A quick refreshing punch for the upcoming Valentines Day for your little and grown-up Valentines.

You Need:

  • 2 scoops of Vanilla Ice cream
  • 2 cups Ginger Ale (chilled)
  • 1/2 cup Pomegranate Juice (fresh)
  • 1/4 cup Pomegranate Seeds (fresh)

For Pomegranate Chia Syrup

  • 1/2 cup Pomegranate Juice
  • 2 tbsp Chia Seeds
  • 2 tsp Sugar (optional, if juice is too tart or sour)
  • 1/4 tsp Vanilla Extract

How To Make It:

Making Pomegranate Chia Syrup:

  1. In a pot, add pomegranate juice- chia mixture along with sugar and vanilla extract. Cook this till it gets thick and sticky. Once done turn off the heat and keep it aside. 

Making The Drink:

  1. Start with adding pomegranate seeds (optional), follow that with ice cream.


  2. Next, add the pomegranate chia syrup and pomegranate juice. Now add the ginger ale. 

  3. Lastly, finish off with another scoop of ice cream and some for fresh pomegranate seeds for garnish. 
  4. Serve. 

Recipe Notes

  • Make sure you soak the chia seeds before using it for making the syrup. 2 to 3 hours soaking time is good- overnight still better.
  • This recipe can be made in a Punch Bowl too. Follow the same pattern for making the drink.

My Little Notes:

I would not recommend serving this punch to babies 1 year and younger. Pomegranate juice sometimes can cause an allergic reaction.

Also, since the recipe includes adding whole pomegranate seeds, they can pose a choking hazard to little ones younger than 1-year-old.

Pomegranates have anti-oxidant, anti-viral, and anti-tumor properties. They are considered a good source of vitamins, especially vitamin A, C, and E, as well as folic acid.

Pomegranates are so useful in maintaining healthy blood circulation. They have been used to clear up the skin, reduce inflammation, and treat sore throats.

Other health benefits include a great cure for heart-related problems, stomach disorders, cancer, dental problems, osteoarthritis, anemia, and diabetes.
