Hi there, everyone. Spring is coming soon. For us in Arizona, the weather is getting warmer and I can see all the signs of Spring Season around me. With flowers blooming and bees buzzing on them, I know the beautiful Spring time is almost here. To welcome this turn of the season, I am sharing with you all this delicious recipe of Pistachio Saffron Smoothie. Filled with flavor and aroma of saffron and rose water, this exotic smoothie will be an instant hit on your next Spring Themed gathering. This smoothie is great for babies who are free of nut allergies and who have already started the dairy. Not to forget as always, this recipe is great for everyone in the family- from young to old.
I got the inspiration for this recipe from a drink which is usually served in India during this time of the year. It is known as Thandai. Thandai is made during Holi. Holi is the festival of colors and it is celebrated as the first day of spring by playing with colorful powder with full enthusiasm. Getting back to the recipe. For making this delicious smoothie, I have used vanilla yogurt and pistachio gelato for the base. To give it a thick creamy texture. The main ingredient here is saffron, rose water and cardamom, which gives it’s amazing aroma to the drink. I have absolutely added no sugar to the drink. But if want it a bit on a sweeter side, you can add some honey or sugar to it. Rose water is easily available in any Indian Grocery stores here.
Pistachios are filled with essential nutrients and have their own share of health benefits. They are filled with carbohydrates, proteins, fats, dietary fiber, phosphorus, potassium, thiamine, vitamin B-6, beta-carotene, lutein and calcium, iron, magnesium, zinc, copper, manganese, vitamin C, riboflavin, niacin, pantothenic acid, folate, vitamin E, vitamin A, and vitamin K. This recipe can go really well for any brunch parties or birthday gets to gathers. My little one relishes and loves this drink. For her, it’s a green milkshake. - 1½ cup Pistachio Gelato (chilled)
- 1 cup vanilla yogurt (chilled)
- 6 to 7 unsalted pistachios
- 2 to 3 whole cardamom
- 1 tsp rose water
- ¼ tsp saffron strands
- Start by adding half of the saffron strands to ½ tsp rose water. Keep it aside for garnishing
- Now in a blender, add pistachio gelato, vanilla yogurt, reaming saffron strands, rose water, peeled cardamom pods, and pistachio. Blend it into a smoothie.
- For serving, pour the smoothie into a glass, top it with a small scoop of pistachio gelato and top that with rose water and saffron that we kept earlier for garnishing.
- Serve immediately.
