Hi there, everyone. Spring is coming soon. For us in Arizona, the weather is getting warmer and I can see all the signs of Spring Season around me. With flowers blooming and bees buzzing on them, I know the beautiful Springtime is almost here. To welcome this turn of the season, I am sharing with you all this delicious recipe for Pistachio Saffron Smoothie. Filled with flavour and aroma of saffron and rose water, this exotic smoothie will be an instant hit at your next Spring Themed gathering. This smoothie is great for babies who are free of nut allergies and who have already started the dairy. Not to forget as always, this recipe is great for everyone in the family- from young to old.

I got the inspiration for this recipe from a drink which is usually served in India during this time of the year. It is known as Thandai. Thandai is made during Holi. Holi is the festival of colors and it is celebrated as the first day of spring by playing with colorful powder with full enthusiasm. Each and every member of the household participates in this fun festive celebration. You can get more information on Holi here. 

Getting back to the recipe. For making this delicious smoothie, I have used vanilla yoghurt and pistachio gelato for the base. To give it a thick creamy texture. The main ingredient here is saffron, rose water and cardamom, which gives it’s amazing aroma to the drink. I have absolutely added no sugar to the drink. But if want it a bit on a sweeter side, you can add some honey or sugar to it. Rose water is easily available in any Indian Grocery stores here.

Pistachio Saffron Smoothie

Pistachios are filled with essential nutrients and have their own share of health benefits. They are filled with carbohydrates, proteins, fats, dietary fiber, phosphorus, potassium, thiamine, vitamin B-6, beta-carotene, lutein and calcium, iron, magnesium, zinc, copper, manganese, vitamin C, riboflavin, niacin, pantothenic acid, folate, vitamin E, vitamin A, and vitamin K. Pistachios also help in maintaining healthy digestion, boost immunity, aids in wound healing and cellular growth. Also, it helps in improving body’s metabolism. Ingredients

  • 1 + 1/2 cups Pistachio Gelato (chilled)
  • 1 cup Vanilla Yoghurt (chilled)
  • 6-7 Pistachios (unsalted)
  • 2-3 Cardamom Pods
  • 1 tsp Rose Water
  • 1/4 Saffron Strands

Instructions

  1. Start by adding half of the saffron strands to 1/2 tsp rose water. Keep it aside for garnishing
  2. Now in a blender, add pistachio gelato, vanilla yoghurt, reaming saffron strands, rose water, peeled cardamom pods, and pistachio. Blend it into a smoothie.
  3. For serving, pour the smoothie into a glass, top it with a small scoop of pistachio gelato and top that with rose water and saffron that we kept earlier for garnishing.
  4. Serve immediately.

Recipe Notes

You can increase the quantity of saffron, rose water, and cardamom as needed.
