I am so excited to share a recipe with you all here at Easy Baby Meals. I am been blogging for 5 years now at THE EATERSPOT. My blog is multi-ethnic, and I share all sorts of recipes, so you are bound to come across something that you would like!

I am always on the lookout for quick, easy, healthy and yummy things to make for my daughter. I work full time so morning times during the work week needs to be quick.
I made this pancake bites not so long ago for my little miss and I realized this would be perrrrfecccttt not just for breakfast but also for a morning tea type gathering with other little kids and their parents. These are so easy to make (as you will see) and they taste just delicious. I lightly heated these in the microwave and had mine with a cup of coffee while my daughter had them buttered (she really loves butter).

On to the recipe.
Ingredients:
1 box of pancake mix
Fruit of your choice can be frozen or canned (Berries, peaches, etc)
Preheat the oven to 180c / 350F.
Prepare the pancake mix according to package instructions or however you usually do. Pour the batter into muffin tins that have been sprayed down with oil.
I filled it halfway and then topped each with fruit. In this recipe, I only used peaches. But you can go with strawberries, raspberries or blueberries. I pressed the fruit down a bit into the batter.
Bake for around 10 minutes. I did check if it was cooked through with a toothpick. Once done, remove and let it cool down.
Drizzle some maple syrup or slice them in half and butter them. Serve them warm.

I grew up with peach trees, and they are one of my faves. We used to cut them up on top of our pancakes. This reminded me of that. I want to go eat some now.
