Hello everyone and Welcome to first FoodieMamas Round-Up of 2017. For all of you who are here for the first time, here’s a little bit about FoodieMamas. We, mamas- who are all foodies aka Food Bloggers have come together and have formed a small group called- FoodieMamas.

One of us picks up a food ingredient every month and we work with that ingredient and come up with new recipes. This month Emily from ‘The Best Of This Life‘ picked up Sweet Potatoes as a main ingredient. So the following are the recipes made with sweet potatoes as the featured ingredient.

From my side, I made these Mashed Sweet Potatoes with Herbs. I wanted to make something which was good for babies as well as for grown-ups. Sweet Potatoes are a good source of various nutrients for a baby and are good to be introduced as early as 6 months of age.

Sweet potatoes are packed with beta-carotene, which is essential for normal growth and development, the function of immune system and vision. They have various antioxidant and anti-inflammatory properties and help in maintaining normal blood sugar level. With so many health benefits, they are good for everyone in the family.

Mashed Sweet Potatoes With Herbs

In the following recipe, I have steamed the sweet potatoes, mashed it and have flavoured them with two herbs. Rosemary and Garlic. When I started EasyBabyMeals, my main objective was to introduce herbs in baby food. Also, my daughter is one adventurer’s foodie, who liked to have a zing in her food. So herbs were a part of all the recipes that I made for her. Whenever I introduced her to new herbs, I made sure it was age appropriate, so that she won’t have any reaction to it.

Since these mashed sweet potatoes are mildly flavoured with Rosemary, they give it a warm delicious aroma, which makes it an ideal comfort food for babies as well as for grown-ups and everyone in between. The sweetness from the sweet potatoes makes it appealing for babies, and the warm comforting texture and aroma make it deliciously tempting for the grown-ups. Mashed Sweet Potatoes With Herbs

Sweet Potatoes are available year-round.While shopping for these, pick ones which are free from bruises, cracks, soft spots, and should be firm. Avoid getting those which are displayed in the refrigerated section of the store, as cold alters its taste. Sweet potatoes should be stored in a cold dark place away from excess heat.

Mashed Sweet Potatoes With Herbs

These Mashed Sweet Potatoes With Herbs are the ones you need to try this season. Mildly flavoured with Rosemary, they are a perfect side to go with your meal.

You Need:

  • 2 cups Sweet Potatoes (cleaned, peeled and chopped)
  • 4 to 5 Rosemary Leaves (fresh)
  • 1 clove of Garlic
  • 1 tsp Olive Oil (extra virgin)
  • Salt And Black Pepper To Taste (skip, if making it as baby food)

How To Make It:

  1. In a steamer, steam sweet potatoes till they are soft and tender.
  2. Once done, transfer these to a bowl and mash them. Add a little water if needed if they get too dry.
  3. Now in a pot heat olive oil. Add chopped garlic, and rosemary leaves. As the garlic crackles, add the mashed sweet potatoes to it. Mix everything well.

  4. Season this with salt and black pepper. (Skip this step if making it as baby food)
  5. Cover it and switch off the heat. Let it rest for few minutes.

  6. Serve these as a side to your meal.

    I love the idea of doing a round-up based around one ingredient! So many tasty sweet potato ideas. And these mashed sweet potatoes sound especially yummy. Rosemary and garlic are some of my favorite flavors, and I imagine they blend perfectly with the sweet potato. Will have to give this a try!

    I’m a sweet potato (and mashed potato) junkie, so this is right up my alley. I have some sweet potatoes lying around in my pantry now, so I can’t wait to give these a shot!
