Hi there. Summertime equals outdoor time. And outdoor time calls for enjoying relaxing summer picnics. I remember my growing up days with my parents enjoying the summer break and picnic in a park.

A relaxing moment spent with my parents is something I still cherish every day.

Today I am sharing a pasta salad recipe which is good for such memorable family picnics. 

 

Since we are talking about picnics, carrying a delicious meal to enjoy is a must-have. I made this pasta salad since it’s to make assemble and carry.  I have a genuine crush on pickled cucumbers. I literally survived on those during my pregnancy.

To my surprise, I have passed that fondness for dill pickles to my daughter too. She loves to munch on those.

So I have mixed dill pickle with pasta and added some vegan mayonnaise. To give it a crunch and sweetness I have added an apple to this salad.

The combination of tart flavor from the pickle and sweet from apple makes this salad absolutely irresistible for both little ones and grown-ups.

Salad Dressing-001

This salad goes well with any grill recipes. It can be a great light lunch option too. I made this recipe keeping my 3-year-old in my mind.

So I haven’t added any chilies or paprika to it. But you all can add those too while serving grown-ups. This is one delicious as well as nutritious pasta salad which kids as well grown-ups would enjoy together.

For enjoying this salad outdoors, pack the salad ingredients and salad dressing in a cold box. Just add the dressing to the pasta and enjoy. This pasta salad is a great lunch-box option too for kids and grown-ups.

Cucumber Pickle Pasta Salad

You Need:

  • 1 cup Bow Tie pasta Shells
  • 2 slices or 1 cup Pickled cucumber (chopped)
  • 1/2 cup Vegan Mayonnaise
  • 1/4 cup Chives (chopped)
  • 2 to 3 Garlic Cloves
  • 1 Apples
  • 1 tbs Dill (chopped)
  • 1 tbs Pickle Juice
  • A dash of Garlic powder
  • Pepper to taste

How To Make It:

  1. Start with cooking pasta according to the package instructions.
  2. For the dressing, in a mixing bowl add vegan mayonnaise, pickle juice, chives, dill and black pepper. Mix everything well. Transfer this to an airtight container and keep it in a refrigerator.
  3. In a large bowl, add the cooked pasta, chopped apple, and pickled cucumber slices. Add the prepared dressing and mixing everything well. Garnish these with some more dill leaves and freshly ground black pepper.
  4. Serve.
